Every table on the Peninsula gets harder to land during Car Week. The crowds triple, the good restaurants book solid, and a walk-up dinner in Carmel on a Friday in August is a fantasy. But locals still eat well all week, because they know where to go and when.

The first rule is to eat inland and off the tourist core. Seaside, Marina, and Salinas barely feel the Car Week crush, and that is where the taquerias, the counters, and the honest kitchens keep humming while Carmel gridlocks. The second rule is timing. Eat early, before the event crowds pour off the lawns at six, or eat late, after the first seating clears. A 5:30 dinner or a 9:00 one beats fighting for a 7:30 table you did not reserve in the spring.

Pacific Grove is the quiet winner. It sits minutes from everything but draws a fraction of the Carmel crowd, and its downtown runs the kind of unfussy, reliable spots that do not require a reservation made three months out.
